Red Bean Tuna Pasta Recipe
Add Step-by-Step Photos

I had no idea what to eat one day - I wanted to make something cheap, easy, fast and tasty... I looked around to see what I had and I improvised... the result was amazing. I am guesstimating actual amounts since I wasn't measuring.

Ingredients
  • 1 can flaked tuna
  • 1/2 can red kidney beans, washed (I had half can in the fridge already - a full can might be too much, but you can easily add another can of tuna and more pasta to accommodate)
  • 1 carrot cut in cubes
  • 1-1/2 small onions, chopped in little pieces
  • 1/2 teaspoon dried basil
  • 3 cloves, gently crush it if you want it to release more flavour
  • 2 cloves of garlic, grated (optional if you don't like garlic)
  • salt, to taste
  • 1 freah leaf of pudina (optional - it's an indian herb)
  • vegetable oil - I'm guessing this was about 1/4 cup
  • drizzle of sesame oil (I love the smell and flavour of sesame oil)
  • 1-2 cups pasta, cooked and strained (the curly one is cute)
  • dried parsley flakes for garnish (optional)

Directions
  1. Boil pasta in a pot to your desired tenderness... I like mine soft
  2. In another pot, add vegetable oil until heated well
  3. When oil is hot, add carrots, onions, garlic, cloves and pudina. Stir occasionally for a minute or so.
  4. Add tuna, red beans, salt and basil. Mix in and lt cook for another minute or so.
  5. Sprinkle the sesame oil.
  6. Add the cooked pasta to the pot with the ingredients and mix everything together.
  7. Help yourself to you quick and easy meal - which smells incredible! Sprinkle some parsley for garnish and enjoy!

I like the sound of this and the fact that it is not over populated with beans.
The photo looks really good too.
I might break down and purchase some fresh tuna and perhaps grill it before adding it to the rest of the ingredients.
Thank you for sharing.

Nice put together meal, can easily be modified by what you have in the fridge. Healthy too, nice post.
