How to make it

  • In a pan, place a sheet of heavy duty aluminun foil, shiny side up
  • Arrange the 4 onions on foil
  • Roast at 400 degrees for about 1 hour, or when you can easily pierce top with a knife
  • Remove from oven
  • Meanwhile, while onions are roasting, put the jalapenos, cilantro and cranberries in a small bowl, sprinkle with coarse salt
  • Then roll the cream cheese chunks, slightly pressing in the jalapenos, cilantro, and cranberries to coat them
  • Squeeze lime juice over the chunks of cream cheese
  • With sharp knife slit open the tops of the hot onions with 2 cross cuts
  • With 2 teaspoons, push apart their centers
  • Drop a chunk of cream cheese in each onion,
  • Drizzle in any lime juice left in the bowl
  • Close up the onions around the cheese.
  • Serve hot
  • NOTE: Can make these onions savory, by adding thyme, sage, oregano, paprika, etc. Can omit the cranberries. If making them savory, add buttered, browned bread crumbs to top, after closing the onion. Delicious!
