Broccoli And Spinach Soup Recipe
This was an easy and good soup I created to use some leftiver broccoli. You could easily make this vegetarian by using veggie stock instead of chicken stock. The spinach makes this so green, it looks incredibly healthy.

Ingredients
  • 1 Tablespoon butter
  • 1/2 medium onion, sliced thin
  • 1/2 cup chopped broccoli
  • 2 cups cooked broccoli
  • 2 cups frozen chopped spinach
  • 1/2 cup leftover brown or white rice
  • 4 cups chicken stock

Directions
  1. Cook onion and celery in butter until soft.
  2. Add chicken stock and rice and simmer for 5 minutes.
  3. Add broccoli and spinach and simmer for 5 minutes, until all vegetables are soft.
  4. Puree with immersion blender or in blender or food processor.
  5. Correct seasonings and serve.
