Ingredients
  • 1 pkg (8oz) Light Cream Cheese, softened
  • 2 tsp liguid sugar substitute
  • 1/2 tsp coconut extract
  • 1 cup unsweetened coconut flaked or shredded
  • Grated unsweetened chocolate, cocoa powder, toasted almonds, or crushed sugar free candy.

Directions
  1. Beat cream cheese, sugar substitute & coconut extract in medium bowl with mixer til smooth.
  2. Stir in coconut.
  3. Refrigerate until slightly firm, above 20 mins.
  4. Place grated chocolate in shallow bowl
  5. For each candy, shape scant 1 TBSP of the mixture into 1" ball.
  6. Rolls balls in chocolate.
  7. Store in refrigerator.

Does it have to be liquid sugar substitute, or would splenda work, do you think?


You can use splenda, but you'll have to adjust the amount to have the right sweetness to it. Start out small, say like 1 tsp, taste it, if need more than 2 tsp, so forth.
