Peppery Gingered Asparagus

- 1-1/2 pounds fresh asparagus shopping list
- vegetable cooking spray shopping list
- 2 Tablespoons soy sauce, low sodium works well shopping list
- 1-1/2 teaspoons minced ginger root shopping list
- 1 hot chile ie, serrano, seeds and stem removed, and finely minced shopping list
- Dash of freshly ground black pepper shopping list
How to make it
- Break off tough asparagus ends.
- Remove scales from the stalks with a sharp knife.
- Cut the spears into 2 inch pieces.
- Coat a large nonstick skillet with cooking spray.
- Place skillet over a medium low heat until hot.
- Add asparagus, soy sauce, ginger root, serrano, and ground pepper.
- Cook, stirring constantly for 5 minutes.
- Serve immediately.
- Makes 4 servings
- Asparagus has only 22 calories per half cup or approximately six spears and contains vitamins A and C plus 2 grams of fiber.
