Ingredients
  • 1-1/2 pounds fresh asparagus
  • Vegetable cooking spray
  • 2 Tablespoons Soy Sauce, low sodium works well
  • 1-1/2 teaspoons minced ginger root
  • 1 hot chile ie, serrano, seeds and stem removed, and finely minced
  • Dash of freshly ground black pepper

Directions
  1. Break off tough asparagus ends.
  2. Remove scales from the stalks with a sharp knife.
  3. Cut the spears into 2 inch pieces.
  4. Coat a large nonstick skillet with cooking spray.
  5. Place skillet over a medium low heat until hot.
  6. Add asparagus, soy sauce, ginger root, serrano, and ground pepper.
  7. Cook, stirring constantly for 5 minutes.
  8. Serve immediately.
  9. Makes 4 servings
  10. Asparagus has only 22 calories per half cup or approximately six spears and contains vitamins A and C plus 2 grams of fiber.
