Ingredients
  • 1/3 cup butter
  • 2 cans tuna (6 oz each), packed in water, drained
  • 1 can(14 1/2 oz) diced tomatoes
  • 1/4 tsp cayenne pepper
  • 1 small onion, chopped
  • 3 Tbsp all purpose flour
  • 1/4 tsp salt
  • 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • 1/8 tsp ground black pepper
  • 1 can (12 fl oz) evaporated milk
  • 1 1/2 cup shredded cheddar cheese
  • 2 Tbsp grated Parmesan cheese
  • 1 cup instant rice

Directions
  1. Preheat oven to 375.
  2. Melt butter in saucepan, add onion, cook for 5 min.
  3. Blend in flour, salt and pepper.
  4. Stir in evaporated milk.
  5. Cook over medium heat, stirring constantly, until it comes to a boil.
  6. Stir in cheeses, stirring until melted.
  7. Combine rice, paprika, oregano, cayenne pepper, and tomatoes in an 11 x 7 baking dish.
  8. Top with tuna.
  9. Spread cheese sauce over tuna.
  10. Bake 20-25 mintues or until edges are bubbly.
