Wild or farm raised, this is an easy, delicious way to serve salmon. It's baked quickly and then broiled quickly or it can be baked only

Ingredients
  • 4 salmon fillets, salt and pepper to taste
  • 1 Tbl onion powder
  • 1 tsp crushed red pepper flakes
  • ¼ C olive oil
  • ¼ C lemon juice
  • 4 garlic cloves, minced
  • 3 Tbl white balsamic vinegar
  • 2 Tbl white sugar
  • 2 Tbl chopped green onions
  • 2 Tbl chopped cilantro (or parsley)

Directions
  1. Season salmon with salt, pepper and red pepper flakes, place in freezer bag
  2. In medium bowl mix other ingredients. Add marinade to salmon in bag and refrigerate, turning overnight, or for at least 6 hours
  3. Preheat oven to 450
  4. Arrange salmon on baking sheet, place in preheated oven and bake 7-8 minutes, increase heat to 500 degrees and broil for about 5 more minutes
  5. If baking only use a 400 oven for about 20-25 minutes

Thanks for the recipe - I'm always looking for something new to do with salmon and this sounds wonderful. I usually buy flash-frozen wild salmon, so I'm thinking I could let it defrost in your marinade and it would be perfect.


Like you Pat I am wild about salmon too. Sounds like a twice baked potato would go well with this wonderful recipe.
