This was a recipe we came across at a small restaurant in Lake Havasu City, Arizona. The restaurant was called "The Hacienda". It makes a great healthy meal.

Ingredients
  • 1 large can of refried beans
  • 1 pkg of flour tortillas
  • 2 cups grated cheddar cheese
  • 2 tomatoes
  • 1 sweet onion
  • 2 cups shredded lettuce
  • sour cream
  • picante sauce
  • 3 Tbs cooking oil

Directions
  1. Prepare your lettuce, onion, tomatoes and cheese.
  2. Place your refried beans in sauce pan and heat through.
  3. Heat oil in skillet. Place one flour tortilla in hot skillet, turning once. You can cook your tortilla's to be as soft or crisp as you like.
  4. Remove cooked tortilla and spread refried beans over it.
  5. Add cheese and onions. Add the cheese at this point while beans are hot so the cheese will get nice and melty.
  6. Top with lettuce and tomatoes.
  7. Garnish with picante sauce and or sour cream. Enjoy!
