Potato Candy Recipe
This is a Christmas candy that my mom has made every year since I was a child.It's VERY sweet and rich. The main flavor is peanut butter. You don't taste potato at all.

Ingredients
  • 1 - Small to Medium Potato
  • 1 - Box of Powdered Sugar
  • 1 - Medium-size jar of Creamy Peanut Butter

Directions
  1. 1) Peel potato and boil whole until done
  2. 2) Mash potato in mixing bowl until completely smooth. (use back of tablespoon to take out all lumps)
  3. 3) Add powdered sugar a little at a time (Mixture will become soupy, but keep adding powered sugar until it thickens to the consistancy of pie crust dough)
  4. 4) Spinkle powdered sugar on counter surface and roll-out dough just like a pie crust.
  5. 5) Spread peanut butter about 1/4 inch thick on rolled-out dough.
  6. 6) Roll-up dough as you would a jelly roll
  7. 7) Cover with plastic wrap and place roll in refrigerator until cold (30min - 1 hour)
  8. 8) Remove roll from refrigerator and slice into 1/2 inch slices.
  9. 9) Serve slices or store in closed container.

My grandma has been making potato candy for tonz of years. Now my mom makes it and it is totally awsome!! You must try it. Sweet and delicious. Don't knock it till you try it!


Most wonderful candy, this is one my grandma and mom made, and now I make it for my family. Very rich can only eat a small amount at a time.
