Bread Machine Honey Whole Wheat

- 1 c water shopping list
- 1/8 c orange juice concentrate, thawed shopping list
- 1/3 c honey shopping list
- 1 1/2 T butter, cut into small chunks shopping list
- 3 c flour - whole wheat and or bread machine flour (see note) shopping list
- 1/2 c 6, 9, or 12 grain cereal, replace part of cereal with ground flax seed if desired shopping list
- 1 T wheat gluten shopping list
- 1 T dry milk powder shopping list
- 1 1/2 t salt shopping list
- 1 1/2 t active dry yeast shopping list
How to make it
- Place ingredients in bread machine in the order recommended by your machine.
- I use a 2 cup wet measure for my liquids. I add water, then honey then the OJ concentrate. Makes it easier and more accurate.
- I have tried various flour ratios to make three cups total flour. The photos are of a "mistake" where I used 1 c Bob's Red Mill whole wheat and thought I was using 2 c regular bread flouer. Instead it was Gold Medal whole wheat! Bread was incredibly good so I'll continue to make this "mistake".
- Keep the salt and yeast separated. I put in half the flour, then the salt, then the rest of the flour. Make a well in the top for the yeast.
- I used the whole wheat setting in my Sunbeam bread machine.
- As always, check the bread ball during the first knead and add more liquid (only 1 t at a time - a little goes a long way) or flour (also 1 t at a time) as needed.
- I use an organic frozen orange juice - no additives like calcium, etc. I keep it in the freezer and nuke it just enough to get the liquid concentrate.
- Modify for high altitude if needed.
- This makes a 1 1/2 pound loaf.
