Kid Friendly Bagel Melts

Also makes a great appetizer or Brunch item. Chicken can be substituted with your faborite meat. Kids LOVE this!
Ingredients
- 1/2 lb boneless skinless chicken breasts, cut into strips shopping list
- 2 Tbl cooking oil shopping list
- 2 bagels (any flavor), each cut in half and toasted, if desired shopping list
- 1/4 cup Dijon mustard2 tomatoes, thinly sliced shopping list
- 4 thin slices red onion shopping list
- 4 slices cheddar cheese shopping list
How to make it
- In skillet, cook chicken strips in oil, set aside
- Preheat broiler. Place bagel halves on baking sheet.
- Evenly spread bagel halves with mustard, then top each with sliced tomato, onion, chicken and cheese.
- Broil until cheese is melted and serve.
- NOTE: The chicken could also be substituted with bacon strips, canadian bacon, turkey strips, steak strips, etc. Use whatever suits your taste buds at the time

You may want to omit the onion if too warm when serving to kids!

Donna, we love them too but watch out for those onions, they sometimes have a "bite" this time of year, lol. Sometimes if they are too strong, I saute' the slices just a few minutes in butter first. Enjoy!
