Very light dessert for after a heavy meal, easy just needs chilling. Easier still if you cube the fruit instead of making the melon balls, but of course the melon balls look prettier

Ingredients
  • Equal parts of sugar, fresh lime juice and white rum
  • about 1/2 cup each
  • zest of one lime, green part only
  • 1 quart of melon balls, mixed, cantaloupe, honeydew, Persian, watermelon, chilled
  • mint leaves for garnish

Directions
  1. Melt sugar in 1/4 cup of water, bring to a boil until the sugar is dissolved.
  2. Allow to cool. Add the lime juice,rum and zest. Chill.
  3. Pour over melon balls. Stir and chill for at least 30 minutes
  4. Garnish wth mint leaves..
