There are no limits to this recipe. You can use any fruit your little heart desires. This is a vegetarian, low fat cobbler. Only 175 calories per serving. Seconds anyone?

Ingredients
  • 2 cups blueberries or any other fruit of your choice
  • 1-1/2 tsps. cornstarch
  • 1/8 cup honey
  • 1/2 tsp. lemon juice
  • 1/2 ccup whole wheat flour
  • 1 Tbsp. brown sugar
  • 1 tsp. baking powder
  • pinch nutmeg
  • pinch cinnamon
  • pinch salt
  • 1-1/2 tsps. canola oil
  • 1/4 cup unsweetened soy milk
  • *I like to use vanilla flavoured but that's just me

Directions
  1. Cook the berries, cornstarch, honey and lemon juice over medium to medium low heat until the mixture boils and thickens.
  2. Pour into an ungreased baking dish.
  3. Mix the remaining dry ingredients, then stir in the oil and soy milk to form a thick batter.
  4. Drop by tablespoons onto the blueberries.
  5. Bake at 425 degrees F for 15 to 20 minutes or until the topping is nicely browned.
  6. Serve warm with ice cream.
