Blueberry Cobbler

- 2 cups blueberries or any other fruit of your choice shopping list
- 1-1/2 tsps. cornstarch shopping list
- 1/8 cup honey shopping list
- 1/2 tsp. lemon juice shopping list
- 1/2 ccup whole wheat flour shopping list
- 1 Tbsp. brown sugar shopping list
- 1 tsp. baking powder shopping list
- pinch nutmeg shopping list
- pinch cinnamon shopping list
- pinch salt shopping list
- 1-1/2 tsps. canola oil shopping list
- 1/4 cup unsweetened soy milk shopping list
- *I like to use vanilla flavoured but that's just me shopping list
How to make it
- Cook the berries, cornstarch, honey and lemon juice over medium to medium low heat until the mixture boils and thickens.
- Pour into an ungreased baking dish.
- Mix the remaining dry ingredients, then stir in the oil and soy milk to form a thick batter.
- Drop by tablespoons onto the blueberries.
- Bake at 425 degrees F for 15 to 20 minutes or until the topping is nicely browned.
- Serve warm with ice cream.

I love cobbler, I just made a cherry cobbler, this one sounds good and healthier than the one I made. YUM!
