How to make it

  • Cook the berries, cornstarch, honey and lemon juice over medium to medium low heat until the mixture boils and thickens.
  • Pour into an ungreased baking dish.
  • Mix the remaining dry ingredients, then stir in the oil and soy milk to form a thick batter.
  • Drop by tablespoons onto the blueberries.
  • Bake at 425 degrees F for 15 to 20 minutes or until the topping is nicely browned.
  • Serve warm with ice cream.
