Sweet N Tangy Shrimp Wraps

- 1 box of Sea Pak breaded popcorn shrimp (any brand will work fine I prefer Sea Pak) shopping list
- 4 large flour tortillas shopping list
- 1/2 cup of light mayonnaise shopping list
- 1 medium green bell pepper seeded and finely diced shopping list
- 1 medium red bell pepper seeded and finely diced shopping list
- 1/2 cup of finely shredded carrots shopping list
- 1/2 cup of crushed pineapple with juice shopping list
- 1/2 cup of light brown sugar shopping list
- 2 tsp of rice wine vinegar shopping list
- 2 tsp of finely minced garlic shopping list
- 2 tsp of red pepper flakes shopping list
- dash or so of Texas Pete hot sauce or any brand shopping list
- around 4 large leaves of lettuce (opt) shopping list
- thinly sliced and peeled cucumbers (opt) shopping list
- diced tomatoes (opt) shopping list
How to make it
- Bake the popcorn shrimp according to package directions. If you wish to go very healthy then you can opt to use boiled shrimp. I find that the breaded shrimp taste and work better.
- In a bowl mix together brown sugar, mayo, pineapple with its juice, green and red peppers, carrots, rice wine vinegar, minced garlic, red pepper flakes and hot sauce.
- Add shrimp to mixture and toss until thoroughly coated.
- It is optional but if you choose you can heat the shrimp up a bit after this step.
- Add lettuce and cucumbers and tomatoes (if you wish...I do this to keep it healthy and colorful) to wrap then spoon on shrimp mixture. About a cup or so per wrap.
- Wrap up, slice in half and enjoy.
