Sweet N Tangy Shrimp Wraps Recipe
These are so extremely easy to make and literally don't take much preparation except for the baking of the shrimp. The tangy sweet sauce is absolutely delicious. You can serve them warm if you choose but they're perfect just as they are.

Ingredients
  • 1 box of Sea Pak breaded popcorn shrimp (any brand will work fine I prefer Sea Pak)
  • 4 large flour tortillas
  • 1/2 cup of light mayonnaise
  • 1 medium green bell pepper seeded and finely diced
  • 1 medium red bell pepper seeded and finely diced
  • 1/2 cup of finely shredded carrots
  • 1/2 cup of crushed pineapple with juice
  • 1/2 cup of light brown sugar
  • 2 tsp of rice wine vinegar
  • 2 tsp of finely minced garlic
  • 2 tsp of red pepper flakes
  • dash or so of Texas Pete hot sauce or any brand
  • around 4 large leaves of lettuce (opt)
  • thinly sliced and peeled cucumbers (opt)
  • diced tomatoes (opt)

Directions
  1. Bake the popcorn shrimp according to package directions. If you wish to go very healthy then you can opt to use boiled shrimp. I find that the breaded shrimp taste and work better.
  2. In a bowl mix together brown sugar, mayo, pineapple with its juice, green and red peppers, carrots, rice wine vinegar, minced garlic, red pepper flakes and hot sauce.
  3. Add shrimp to mixture and toss until thoroughly coated.
  4. It is optional but if you choose you can heat the shrimp up a bit after this step.
  5. Add lettuce and cucumbers and tomatoes (if you wish...I do this to keep it healthy and colorful) to wrap then spoon on shrimp mixture. About a cup or so per wrap.
  6. Wrap up, slice in half and enjoy.
