How to make it

  • Bake the popcorn shrimp according to package directions. If you wish to go very healthy then you can opt to use boiled shrimp. I find that the breaded shrimp taste and work better.
  • In a bowl mix together brown sugar, mayo, pineapple with its juice, green and red peppers, carrots, rice wine vinegar, minced garlic, red pepper flakes and hot sauce.
  • Add shrimp to mixture and toss until thoroughly coated.
  • It is optional but if you choose you can heat the shrimp up a bit after this step.
  • Add lettuce and cucumbers and tomatoes (if you wish...I do this to keep it healthy and colorful) to wrap then spoon on shrimp mixture. About a cup or so per wrap.
  • Wrap up, slice in half and enjoy.
