This stew can be made with wild or farm rabbits or beef. Rabbit has a white meat and it is very lean similar to chicken.

Ingredients
  • 1 1/2 kilo rabbit cut in portions
  • 1 cup of olive oil
  • 2 1/2 kilos of small onions or 10 very big ones cut in slices
  • 1 glass of red dry wine
  • cinnamon stick
  • 1/2 glass of vinegar (extra for washing)
  • 3 bay leaves
  • 20 peppercorns
  • 1 table spoonful of honey
  • 1 table spoonful of sugar
  • 1 table spoonful of soy sauce

Directions
  1. Wash the rabbit with water and then with vinegar.
  2. Peel the onions and if they are big cut them into slices or use baby onions.
  3. Preheat oil and sauté the meat.
  4. Remove from sauce pan and sauté the onions.
  5. Add the meat again and add the wine and vinegar.
  6. Wait till alcohol evaporates and add salt and pepper, the bay leaves, the cinnamon, the pepper, the honey and sugar and soy sauce.
  7. Do not add water.
  8. Cover with the lid and let it simmer for 1 ½ hours, until the meat and onions are tender.
