Waikiki Meatballs

- 1 1/2 pounds ground beef shopping list
- 2/3 cup cracker crumbs shopping list
- 1/3 cup finely chopped onion shopping list
- 1 egg shopping list
- 1 1/2 teaspoons salt shopping list
- 1/4 teaspoon ground ginger shopping list
- 1/4 cup milk shopping list
- 1 tablespoon shortening shopping list
- 2 tablespoons cornstarch shopping list
- 1/2 cup packed brown sugar shopping list
- 1 can (13 1/4 oz) pineapple chunks or crushed pineapple , drained (reserve syrup) shopping list
- 1/3 cup vinegar shopping list
- 1 tablespoon soy sauce shopping list
- 1/3 cup chopped green pepper shopping list
How to make it
- Mix ground beef, cracker crumbs, onion, egg, salt, ginger and milk. Shape mixture by rounded tablespoonfuls into 1 1/2-inch balls. Heat shortening in 11-inch skillet until melted. Cook meatballs over medium heat, turning occasionally, until done. Remove meatballs from skillet; keep warm. Drain fat from skillet. Mix cornstarch and brown sugar in same skillet; stir in reserved syrup, vinegar and soy sauce until smooth. Cook over medium heat, stirring constantly, until mixture thickens. Boil and stir 1 minute. Add meatballs, pineapple and green pepper; heat through. Serve over rice.
