A yummy variation of the regular pie if using frozen rhubarb, be sure it is thoroughly drained & thawed..

Ingredients
  • 1 1/2 C sugar
  • 1/4 C flour
  • 3/4 tsp nutmeg
  • 3 eggs, beaten lightly
  • 2 C strawberryies, halved
  • 2 C rhubarb, fresh or frozen, sliced
  • 1 9" pis shell, unbaked
  • 1/2 C flour
  • 1/4 C sugar
  • 1/3 C butter, softened

Directions
  1. Preheat oven to 400
  2. Stir together 1st 4 ingredients
  3. Carefully add strawberries & rhubarb
  4. Put mixture in pieshell
  5. Stir together flour, sugar and cut in butter until mix is crumbly
  6. Sprinkle over top of pie
  7. Wrap the edge of the pie shell with aluminum fiol
  8. Bake on center oven rack for 30 minutes
  9. Remove foil and bake an additional 25 minutes
  10. Let rest 60 minutes before serving

Oh I love this!! so good!!


I expected some cream or something.. I have used cream cheese on the bottom of my crust before adding the filling and it is fantastic also...
