Buttery Potatoes Recipe
This is a bit of a twist to the old comfortable "butter and parsley potatoes" that I grew up on.

Ingredients
  • 1 lb red potatoes
  • 2-3 celery stalks
  • 1-2 garlic cloves pealed and sliced thin
  • 1/4 cup margarine or more if you're feeling buttery
  • 2-3 shallots
  • Parsley
  • Salt
  • Pepper
  • Various herbs of your choice

Directions
  1. Wash potatoes, celery, and shallots. Cut potatoes into cubes and slice celery. You may peel potatoes if you like.
  2. Place in a pot of water and bring to a boil.
  3. About half way through add thinly sliced garlic cloves and the shallots.
  4. Boil until potatoes are tender but not mushy. Drain and return to pot. Add margarine, parsley, salt, & pepper to taste, mix and serve hot.
  5. It is also easy to make mashed potatoes out of this by adding a bit of plain soy milk and mashing w/a potato masher.

I'll definitely make these, but i shall use butter to make them taste really sinful - i do not like margarine and i dont care about the cholesterol - as long as my HDL and LDL are perfect :-)
