Buttery Potatoes

- 1 lb red potatoes shopping list
- 2-3 celery stalks shopping list
- 1-2 garlic cloves pealed and sliced thin shopping list
- 1/4 cup margarine or more if you're feeling buttery shopping list
- 2-3 shallots shopping list
- parsley shopping list
- salt shopping list
- pepper shopping list
- Various herbs of your choice shopping list
How to make it
- Wash potatoes, celery, and shallots. Cut potatoes into cubes and slice celery. You may peel potatoes if you like.
- Place in a pot of water and bring to a boil.
- About half way through add thinly sliced garlic cloves and the shallots.
- Boil until potatoes are tender but not mushy. Drain and return to pot. Add margarine, parsley, salt, & pepper to taste, mix and serve hot.
- It is also easy to make mashed potatoes out of this by adding a bit of plain soy milk and mashing w/a potato masher.
