Bayou Country Cajun Maquechou

- 1 lb. bacon shopping list
- 1/2 cup bacon drippings shopping list
- 35 oz corn, can, drained shopping list
- 1 lg onion, chopped shopping list
- 2 md garlic cloves, minced shopping list
- 1 lg green pepper, chopped shopping list
- 2 md tomatoes, peeled,chopped shopping list
- 1 tsp salt shopping list
- 1/2 tsp black pepper shopping list
- 1 tbsp sugar shopping list
- 1/2 tsp cayenne pepper shopping list
- 1 cup chicken broth, canned shopping list
- 1 cup milk shopping list
How to make it
- Fry Bacon , Place Bacon on a Paper towel
- Keeping the bacon drippings
- In a heavy 12-inch skillet over medium heat.
- Add corn, onion,garlic, and bell pepper; cook until onion is thoroughly wilted and transparent,
- about 10 mins.
- Stir often to prevent sticking.
- Add tomatoes, salt, black pepper,sugar and cayenne;
- stir until combined.
- Add broth little a time to prevent sticking you might not use all of it..
- Reduce heat. Barely simmer, stirring often, until liquid has almost evaporated, about 30mins.
- The mixture will be thick and mushy. Stir in milk; cook until reduced by 1/2.
- Increase heat slightly. Cook just 3 or 4 minutes. serve hot .
- Makes 4 to 6 servings
