Food Processor Cheesecake Recipe
What is special about this cheesecake is the fact that it is very inexpensive, quick, easy and foolproof. It is ideal for an occasion when you want to produce a wonderful dessert but don't have much energy.

Ingredients
  • Crust:
  • 1 1/2 cups graham cracker or digestive biscuits crumbs
  • 6 tablespoons butter, melted
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • Filling:
  • 2 tablespoons butter, melted and cooled
  • 12 ounces cream cheese
  • 1 cup cottage cheese
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons vanilla extract

Directions
  1. Preheat oven to 350 degrees.
  2. Place the crumbs in a bowl and add the sugar and butter.
  3. Blend well.
  4. Press the crumb mixture halfway up the side of a greased 9 inch springform mold and on the bottom.
  5. Make sure the crumb mixture along the bottom is smooth and even.
  6. Bake for 10 minutes.
  7. Cool before filling.
  8. Place steel blade in the food processor.
  9. Put all of the ingredients including the butter into the food processor.
  10. Process until very smooth.
  11. Pour the mixture into the prepared crust.
  12. Bake for 30 minutes.
  13. Cool the cake in the oven with the door propped open until it is at room temperature.
  14. Chill for a couple hours.
