Jammin Cookies

- 100 g sugar (125 ml; 1/2 cup) shopping list
- 200 g margarine (200 ml; 3/4 cup) shopping list
- 1 egg shopping list
- 3 ml vanilla extract (1 teaspoon) shopping list
- pinch of salt shopping list
- 300 g cake flour (625 ml; 2 1/2 cups) shopping list
- FILLING: shopping list
- ======= shopping list
- 250 g apricot jam (1 cup) shopping list
- red food colouring shopping list
- 15 ml sugar (1 tablespoon) shopping list
- DECORATION: shopping list
- ============ shopping list
- icing sugar shopping list
- melted chocolate shopping list
How to make it
- Beat sugar and margarine together until light and fluffy.
- Mix in the salt, extract and egg.
- Mix in the cake flour.
- Mix well.
- Place in fridge to rest for half an hour.
- FILLING:

- Mix jam, colouring and sugar in a saucepan.
- Bring to the boil.
- Let it boil for about 10 minutes.
- Let it cool down.
- COOKIE:

- Roll out dough on a floured surface.
- Not too thin.
- Cut out forms.
- cut out circles in half of the cookies.
- Bake at 180 deg C (360 deg F) on a greased baking tray.
- Bake for 15 - 20 minutes or until golden brown.
- Sift icing sugar over hot cookies with holes in it.
- Make stripes with the melted chocolate over cookies with holes in.
- Put filling on the whole cookie.
- Place cookies with holes in on top.
- Place in fridge until needed.
- Tastes great!!
