Stir Fry With A Pasta And Fruity Flare Recipe

This happens to be one of my favourite stir fry concoctions. It is very forgiving and can be altered to suite your personal taste. You can make it all vegetarian or add meat or seafood.

Ingredients
  • 3 cups dry thin spaghetti (broken in thirds or your favourite pasta)
  • Olive oil or peanut oil
  • 1/2 large sweet onion, chopped
  • 2 garlic cloves, minced or finely chopped
  • 1 cup sliced mushrooms
  • 1 green/red bell pepper, chopped
  • 1 celery rib, chopped
  • 1 zucchini, cut in half lengthwise then slice pieces on an angle
  • a handful of bean sprouts or 1 cup
  • a handful of snow peas or 1 cup frozen peas
  • Firm Tofu if desired
  • 1 Tablespoon cornstarch
  • 1 11-oz can mandarin orange segments or pineapple chunks, drained, reserving liquid
  • 1/2 tsp. ground ginger
  • 1 tsp. slivered fresh ginger
  • 3 Tablespoons low-sodium soy sauce
  • a couple of dashes of rice wine vinegar
  • (optional: sesame oil and red pepper flakes)
  • Note: You can add lightly toasted cashews or sesame seeds to this dish as a garnish.

Directions
  1. Cook your favourite pasta according to package directions.
  2. Drain.
  3. Meanwhile, in a "large" skillet, drizzle a small amount of oil and sauté onions for 2 minutes.
  4. Add garlic, green pepper, celery, zucchini, bean sprouts and mushrooms and sauté until mushrooms begin to soften.
  5. *If you want to add Tofu, meat or seafood - this is the time to do it. Otherwise, it is up to you.
  6. In a measuring cup combine the reserved juice and enough water to equal 1/2 to 3/4 cup.
  7. Add in cornstarch, ginger, soy sauce, rice wine vinegar and a sprinkle of red pepper flakes if you so desire.
  8. Push the vegetables aside and add the liquid.
  9. Stir and cook until it starts to thicken.
  10. Add the cooked pasta and mix it and the vegetables in with the thickened sauce in the pan.
  11. Sprinkle with a small amount of sesame oil and top with the orange segments or pineapple chunks.
  12. NOTE: I often add leftover meat with the vegetables ie. chicken, beef, pork, and if you like seafood - add your favourite.
