Greek Style Squid Recipe

Ingredients
  • clean and cut into chunks: 2 pounds squid, tentacles and tubes
  • dry red wine (2 cups)
  • whole cloves (5)
  • 2 finely chopped medium onions
  • 1/3 cup of olive oil
  • 1/3 cup malt of vinegar
  • 1/4 tbs black pepper (ground)
  • bay leaves (2)
  • 1 cinnamon stick (3 inch)

Directions
  1. In a large saucepan, place the squid, onions, cinnamon stick, cloves and bay leaves. Cover and simmer over low heat approximately 10 minutes. The squid will release its own juices during this time. Next, uncover the pan and simmer until most of the juice has evaporated. Remove next the cinnamon stick, cloves, and bay leaves. Stir, and mix in the wine, olive oil, malt vinegar and pepper. Cover and cook over low heat for approximately one (1) hour, stirring occasionally. To thicken the sauce, remove the lid shortly before the end of cooking. To serve: ladle into bowls.
