Spinach Au Gratin

- 1 (10oz.) Package of frozen chopped spinach cooked and well-drained shopping list
- 1/2 cup sour cream shopping list
- 1/4 teaspoon of salt shopping list
- freshly ground pepper to taste shopping list
- 1/2 cup half and half shopping list
- 1/2 stick butter shopping list
- dash or two of nutmeg to taste shopping list
- 2 Tablespoons of flour shopping list
- 2 cups of shredded sharp cheddar cheese shopping list
How to make it
- First make cream sauce:
- Melt butter into small pot.
- Add half and half
- wisk flour into small amount of cold water, add to butter/cream mixture
- add salt, pepper, nutmeg cook on low until creamy
- Prepare spinach in microwave according to directions on box, drain very well. i usually squeeze cooked spinach in some sturdy paper towels to remove excess water. Place cooked spinach into small casserole dish that is safe for broiler.
- Add sour cream to spinach and some salt and pepper to taste
- Stir in cream sauce.
- Dump cheddar cheese on top
- When ready to serve, reheat in microwave for about 5 minutes, then place under broiler until cheese is melted and lightly browned and bubbly.
