Spinach Au Gratin Recipe
This yummy side dish is the perfect companion for a Holiday Dinner. Also, great for a side dish to bring to a pot luck.

Ingredients
  • 1 (10oz.) Package of frozen chopped spinach cooked and well-drained
  • 1/2 cup sour cream
  • 1/4 teaspoon of salt
  • freshly ground pepper to taste
  • 1/2 cup half and half
  • 1/2 stick butter
  • dash or two of nutmeg to taste
  • 2 Tablespoons of flour
  • 2 cups of shredded sharp cheddar cheese

Directions
  1. First make cream sauce:
  2. Melt butter into small pot.
  3. Add half and half
  4. wisk flour into small amount of cold water, add to butter/cream mixture
  5. add salt, pepper, nutmeg cook on low until creamy
  6. Prepare spinach in microwave according to directions on box, drain very well. i usually squeeze cooked spinach in some sturdy paper towels to remove excess water. Place cooked spinach into small casserole dish that is safe for broiler.
  7. Add sour cream to spinach and some salt and pepper to taste
  8. Stir in cream sauce.
  9. Dump cheddar cheese on top
  10. When ready to serve, reheat in microwave for about 5 minutes, then place under broiler until cheese is melted and lightly browned and bubbly.
