Strawberry Cream Pie

- graham cracker crust - 9 inch shopping list
- 1 pkg (8 ounces) cream cheese, softened shopping list
- 1 t. vanilla shopping list
- 1 3/4 t. Equal for Recipes or 6 packets of Equal Sweetener or 1/4 cup Equal Spoonful shopping list
- 1 cup cold water shopping list
- 2 T cornstarch shopping list
- 1 pkg (small) sugar free strawberry gelatin shopping list
- 3 1/2 t. Equal for Recipes or 12 packets Equal sweetner or 1/2 cup Equal Spoonful shopping list
- 1 pint strawberries, hulled and sliced shopping list
- 8 T frozen light whipped topping (optional) shopping list
How to make it
- Beat cream cheese, vanilla, and 1 3/4 t. Equal for Recipes in small bowl until fluffy; spread evenly in bottom of crust. Mix cold water and cornstarch in small saucepan; heat to boiling, whisking constantly until thickened, about 1 minute. Add gelatin and 3 1/2 t. Equal for Recipes whisking until gelatin is dissolved. Cool 10 minutes.
- Arrange half of the strawberries over the cream cheese; spoon half the gelatin mixture over strawberries. Arrange remaining strawberries over pie and spoon remaining gelatin mixture over.
- Refrigerate until pie is set and chilled, 1 to 2 hours. Serve with whipped topping, if desired.
