Boursin Chicken Recipe
Very easy to make and is one dish that eveyone begs for the recipe! Great for everyday and a definite company pleaser. Goes great with a side salad and CousCous.

Ingredients
  • 4 Chicken Breasts
  • Fresh Baby Spinach (1 bag)
  • Chopped Pecans 1/4 to 1/2 cup to taste
  • 2 pkgs Boursin Cheese (I like the garlic/herb variety)
  • OPTIONAL: Chicken Broth (1/2 cup)

Directions
  1. Flatten chicken breasts.
  2. Quarter one of the Boursin cheeses.
  3. Take each quarter (cheese) and smash in hands into a round and then mash into chopped pecans coating both sides.
  4. Layer several spinach leaves onto chicken breasts. Add quarter of rounded Boursin cheese/pecans onto top half of the breasts. Fold over chicken and place in “Pam sprayed” square baking dish, seam side down.
  5. Crumble additional Boursin cheese over all.. (and can add left over pecans to the bottom of the pyrex baking pan and the left over spinach to the sauce 15 minutes before done).
  6. OPTIONAL: Add just a little chicken broth to the bottom of the baking dish to create more sauce.
  7. Bake at 350 for ½ hour to 45 minutes.
  8. Absolutely a favorite of mine and all my friends and family.
