How to make it

  • Soak the cauliflower in iced salt water for 30 minutes.
  • Wash under running cold water and break the head into florets.
  • Blanch the cauliflower and drain.
  • Put cauliflower into the milk with the potatoes and simmer until the cauliflower is very soft, about 30 minutes.
  • Rub the soup through a fine seive.
  • Add the butter and chives, and serve.
