Pureed Cauliflower Soup

- 1 head cauliflower shopping list
- 2 minced cooked potatoes shopping list
- 2 c scalded milk shopping list
- 2 Tbsp butter shopping list
- minced chives shopping list
How to make it
- Soak the cauliflower in iced salt water for 30 minutes.
- Wash under running cold water and break the head into florets.
- Blanch the cauliflower and drain.
- Put cauliflower into the milk with the potatoes and simmer until the cauliflower is very soft, about 30 minutes.
- Rub the soup through a fine seive.
- Add the butter and chives, and serve.
