Pureed Cauliflower Soup Recipe
A wonderful, thick soothing soup perfect for cold nights.

Ingredients
  • 1 head cauliflower
  • 2 minced cooked potatoes
  • 2 c scalded milk
  • 2 Tbsp butter
  • minced chives

Directions
  1. Soak the cauliflower in iced salt water for 30 minutes.
  2. Wash under running cold water and break the head into florets.
  3. Blanch the cauliflower and drain.
  4. Put cauliflower into the milk with the potatoes and simmer until the cauliflower is very soft, about 30 minutes.
  5. Rub the soup through a fine seive.
  6. Add the butter and chives, and serve.
