This is really an unusual recipe, but very tasty . Its good on meat loaf, barbecued chicken, ribs or pork.

Ingredients
  • -----For 1 cup ketchup----
  • 1 jar (10 to 12 oz) plum preserves purchased or homemade
  • 2ablespoons red wine vinegar
  • 1 tablespoon brown sugar, packed
  • 2 green onions, minced, include green tops
  • 1 clove garlic, minced or pressed
  • 1/2 teaspoon ground ginger
  • 1/2 to 1 teaspoon crushed red chili pepper

Directions
  1. Combine all of the ingredients in a small saucepan.
  2. Place over medium heat, Bring to a boil, stirring. Boil 1/2 minute.
  3. Remove from heat. Cool.
  4. Turn into serving jar or container. Cover and refrigerate overnight to blend flavors.
  5. ----------VARIATIONS----------
  6. To make a tasty peach ketchup, substitute peach preserves or peach chutney for the plum preserves.
  7. To make a mango ketchup, use mango chutney in place of the plum preserves. Puree in blender or food processor.
