Christmas Cranberry Pork Loin Roast Recipe
This is a Tried and True family favorite that is absolutely delicious. The juices can be made into the most wonderful gravy that compliments cornbread dressing!

Ingredients
  • 1 nice boneless pork loin roast (about 5 pounds)
  • 1 teaspoon salt
  • 1 can whole cranberry sauce
  • 3/4 cup favorite barbecue sauce
  • 3/4 cup apple or pineapple juice (have always used apple)
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Directions
  1. In saucepan combine all ingredients except cornstarch and water
  2. Simmer for 10 minutes
  3. Mix cornstarch and water
  4. Add to ingredients in saucepan, stir for a few seconds
  5. Place pork roast in baking pan
  6. Pour simmered ingredients over roast
  7. Your choice on whether to cook the roast covered or not
  8. Place roast in a 325 degree oven
  9. I have cooked the roast uncovered until done AND
  10. I have cooked the roast covered until the last 20-30 minutes, then I uncover and let the outside get a little gooey and thicker, either way will be fine. It turns out the same, covered or uncovered.
  11. I baste it with the drippings a couple of times during cooking
  12. When done, remove roast from pan
  13. Using a little water, cornstarch, or flour, make a delicious cranberry gravy from the drippings in the pan
  14. You really cannot go wrong on cooking this roast. I have cooked it many times, and it always comes out just the same. Delicious with every bite!
