Southern Veggie Dinner

- dry pinto beans shopping list
- ham hock, bacon or sausage shopping list
- Cut off fresh corn shopping list
- Fresh turnip green or frozen if you can't get fresh shopping list
- ham hock or bacon shopping list
- potatoes shopping list
- Self Rising Yellow corn Meal shopping list
- Bit flour shopping list
- egg shopping list
- buttermilk shopping list
- oil shopping list
- kosher salt, cracked pepper, sunsalted butter, sugar shopping list
How to make it
- Sort & rinse dry beans (for as many as you need to serve), boil for 2 minutes. Drain, Rinse and return to pot. Add seasoning meat, salt & pepper. Bring back to a boil. (for quicker meal use canned beans)
- Rinse fresh turnip greens, place in boiling water that has ham hock in a few at a time until all wilted, add salt & pepper, cover and boil until tender. Cut up turnips are also good in it. (for faster meal use frozen greens)
- When the 2 above are done cook the following.
- Wash as many potatoes as you need leaving skins on (you can pare if prefer). Cut potatoes up as you prefer (I cut like french fries). In skillet melt unsalted butter (2 Tbsp) Put potatoes in, salt & pepper, cover and cook on low.
- If you don't have fresh cut off corn in freezer, cut corn off cob. If have none of these use frozen store bought corn. Melt some unsalted butter in skillet, bit of salt, pepper and bit of sugar. Fry on low, covered.
- Mix together corn meal, bit of flour, stir in egg and milk. Preheat iron skillet that has oil and some sprinkled corn meal on until meal starts to brown. Pour in mixture. When bubbles begin to pop up (like pancakes before you flip over) put in preheat 375 degree oven.

This is that perfect kind of meal my Momma used to serve from time to time. Throw in some sliced tomatoes and cucumbers and green onions on the side and you have a Southern feast. Thank you! =)

This is the kind of meal I was brought up on and I fed my kids when they were little. You just can't beat it. So delicious! All I add is a bowl of pickled onions.
