How to make it

  • Preheat oven to 350F. Grease and flour a loaf pan.
  • Whisk together the egg yolks and sugar until light; mix in the whole egg and then add the flour and potato starch, beating smooth.
  • Beat the 2 egg whites with remaining sugar until stiff peaks form; gently fold the beaten whites into the egg yolk mixture, lifting to incorporate air.
  • Pour the mixture into the prepared pan and bake 45 minutes or until tests done.
