According to tradition Count Amadeo di Savoia offered this cake to Charles of Luxembourg in 1438 and was nominated Duke and Imperial officer, thus beginning the rise to power of the future kings of Italy.

Ingredients
  • 2 egg yolks
  • 3 ½ tbsp sugar
  • 1 whole egg
  • 1 cup cake flour
  • 2 ½ tbsp potato starch
  • 2 egg whites
  • 3 tbsp sugar

Directions
  1. Preheat oven to 350F. Grease and flour a loaf pan.
  2. Whisk together the egg yolks and sugar until light; mix in the whole egg and then add the flour and potato starch, beating smooth.
  3. Beat the 2 egg whites with remaining sugar until stiff peaks form; gently fold the beaten whites into the egg yolk mixture, lifting to incorporate air.
  4. Pour the mixture into the prepared pan and bake 45 minutes or until tests done.
