How to make it

  • COOKIE:
  • Cream the butter and sugar together. Add salt, egg, and vanilla and beat until smooth.
  • Add flour and baking soda and beat until combined.
  • Refrigerate dough for 20 minutes or until it firms a bit.
  • Divide dough into 2 portions.
  • Using wax paper roll each portion into logs about 1 1/2 inch in diameter.
  • Refrigerate for 2 hours or until firm.
  • Preheat oven to 325. Cut cookies into slices between 1/4-1/2 inch.
  • Place on sprayed baking sheet and bake 12-14 minutes, or until edges brown slightly.
  • Cool on wire rack.
  • FILLING:
  • Mix whipping cream, butter, and corn syrup in heavy saucepan, heating til it simmers.
  • Remove from heat and immediately add chocolate.
  • Stir until a smooth sauce.
  • Will thicken as it cools.
  • After both are cool, ice bottom of cookie. Placing cookies bottoms together.
