I made this up one night based on what I had around the house and it was a big hit with the family. I served it over steamed rice.

Ingredients
  • extra virgin olive oil
  • sm/med sweet onion
  • 1-2 garlic cloved minced
  • 1 green bell pepper chopped
  • 1 fresh pineapple cut into chunks
  • 11/2 lbs. chicken breast cut into 1in. chunks or strips(marinate for about 20 minutes)
  • Lawry's Havannah garlic and lime marinade

Directions
  1. sautee onion and garlic in pan over medium-high heat for about 2 minutes.
  2. add chicken and cook about 5-7 minutes or until cooked through.
  3. add pepper and pineapple and cook another 2-3 min.
