How to make it
- Bring the oysters to a boil and reserve the liquor.
- Separately, melt the butter in a double-boiler and add the cheese, stirring until fully melted. Season with salt & cayenne.
- Once the cheese has melted, add the oyster liquor to the cheese as well as the 2 eggs, lightly beaten.
- Stir until smooth. Add the oysters.
- Serve immediately over toast.
