Ingredients
  • 1/2 lb chicken breast, sliced into 3/4 inch pieces
  • 3/4 cup peeled ginger thinly sliced
  • One medium onion, sliced
  • 4 cloves of garlic, crushed
  • 3 green onions cut into 2 inch sections
  • 2 Tbls oyster sauce
  • 1 Tbls fish sauce
  • 2 tsp sugar
  • Pinch of salt
  • Pinch of black pepper
  • 3 tbls fo corn starch ( mix in water)
  • 2 tbls of oil for cooking
  • 1/4 cups of water
  • *( check out stir-fry sauce for white meat recipe)

Directions
  1. In a small bowl, mixing corn starch with water...mix well and set aside.
  2. Heat a wok over medium high heat, and add a couple of Tbls of vegetable oil. When hot, add the garlic and stir fry for about 20 seconds, and then add the chicken for about 5 minutes, or until cooked.
  3. Add the onions, ginger and stir fry for another 2 minutes, and then add all the remaining ingredients except for the green onions and the corn starch.
  4. Add 1/4 cup of water, and allow to come to a boil, slightly add small amount at a time of corn starch to the dish until sligthly thicken and add the green onion for another minute of frying. Taste and add more fish sauce or salt if needed, and more sugar to balance if needed.
  5. Serve over good fresh jasmine rice.
