Ingredients
  • 1 small onion, chopped
  • 1 jalapeno, seeded and finely chopped
  • 1 mango diced
  • 1 8 oz. can pineapple tidbits, drained
  • 1 lemon (juice & zest)
  • 1/8 tsp. coriander
  • 2 cloves garlic minced
  • 2 TBL olive oil
  • 1 TBL butter
  • Salt & Pepper to taste

Directions
  1. heat oil in a non-stick skillet over med-high heat
  2. add onions, jalapenos, salt & pepper cook until tender, about 5 mins.
  3. add garlic, lemon zest, and corriander cook until fragrant about 1 min.
  4. push onion and pepper mixture to the sides of the pan and add mango & pineapple, do not stir until fruit has began to carmalize about 5 mins.
  5. check for seasoning
  6. deglaze with lemon juice
  7. add the butter and toss through

For added heat don't remove seeds and ribs from the jalapeno.
