How to make it

  • heat oil in a non-stick skillet over med-high heat
  • add onions, jalapenos, salt & pepper cook until tender, about 5 mins.
  • add garlic, lemon zest, and corriander cook until fragrant about 1 min.
  • push onion and pepper mixture to the sides of the pan and add mango & pineapple, do not stir until fruit has began to carmalize about 5 mins.
  • check for seasoning
  • deglaze with lemon juice
  • add the butter and toss through

    For added heat don't remove seeds and ribs from the jalapeno.
