CHEESECAKE GERMANIA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Renner Estate in Quinlan, Texas in 1987.

Ingredients
  • 1 cup chocolate wafer crumbs
  • 2 tablespoons sugar
  • 3 tablespoons margarine melted
  • 24 ounces cream cheese softened
  • 1/2 cup sugar
  • 1/4 cup flour
  • 3 eggs
  • 4 ounces German sweet chocolate melted
  • 2 teaspoons vanilla
  • 1/3 cup evaporated milk
  • 1/3 cup sugar
  • 1/4 cup margarine
  • 1 egg beaten
  • 1/2 teaspoon vanilla
  • 1/2 cup flaked coconut
  • 1/2 cup pecans, chopped

Directions
  1. Heat oven to 350.
  2. Mix crumbs, sugar and margarine then press onto bottom of spring form pan.
  3. Bake 10 minutes.
  4. Beat cream cheese, sugar and flour at medium speed of mixer until well blended.
  5. Add eggs one at a time mixing well after each then blend in chocolate and vanilla.
  6. Pour over crust and bake 45 minutes.
  7. Loosen cake from rim of pan then cool before removing rim of pan and refrigerate.
  8. Cook evaporated milk, sugar, margarine, egg and vanilla in small pan over medium low heat.
  9. Stir constantly until thickened then stir in coconut and pecans and cool then spread over top.
