Chicken Enchilada Pasta

- 1/4 cup masa flour shopping list

- 1 tablespoon fresh lime juice shopping list

- 1/2 pound skinless boneless cubed chicken breast shopping list
- 1/4 red onion, cut into strips shopping list
- 1/4 green bell pepper, cut into strips shopping list
- 2 tablespoons diced green chilies shopping list
- 2 tablespoons cooked rinsed black beans shopping list
- 2 cups masa lime cheese sauce shopping list
- cooked pasta shopping list
- ***************************************** ************** shopping list
- FOR GARNISH shopping list
- 1 cup shredded cheddar cheese shopping list
- sour cream shopping list
- 4 tablespoons sliced green onions shopping list
- 12 slices jalapeno shopping list
- 1 cup toasted tortilla strips shopping list
How to make it
- Make the masa lime cheese sauce: Heat chicken stock; add masa flour; stirring until dissolved. Add cheese and stir until blended; then add lime juice. Cool.
- In a large skillet, heat corn oil and saute the chicken until lightly browned, about 2 minutes. Add the onion, bell pepper and chiles, then cook for 2 minutes longer. Stir in black beans and cheese sauce; bring to a boil.
- Serve over pasta of your choice, with garnishes.
