  • MASA LIME CHEESE SAUCE
  • 2 cups chicken stock
  • 1/4 cup masa flour
  • 8 oz shredded velveeta cheese
  • 1 tablespoon fresh lime juice

  • For 2 to 3 portions
  • 2 tablespoons corn oil
  • 1/2 pound skinless boneless cubed chicken breast
  • 1/4 red onion, cut into strips
  • 1/4 green bell pepper, cut into strips
  • 2 tablespoons diced green chilies
  • 2 tablespoons cooked rinsed black beans
  • 2 cups masa lime cheese sauce
  • Cooked pasta
  • ***************************************** **************
  • FOR GARNISH
  • 1 cup shredded cheddar cheese
  • Sour Cream
  • 4 tablespoons sliced green onions
  • 12 slices jalapeno
  • 1 cup toasted tortilla strips

Directions
  1. Make the masa lime cheese sauce: Heat chicken stock; add masa flour; stirring until dissolved. Add cheese and stir until blended; then add lime juice. Cool.
  2. In a large skillet, heat corn oil and saute the chicken until lightly browned, about 2 minutes. Add the onion, bell pepper and chiles, then cook for 2 minutes longer. Stir in black beans and cheese sauce; bring to a boil.
  3. Serve over pasta of your choice, with garnishes.
