Hot And Sweet Pineapple Slaw Recipe
This is a really great slaw. Different from your ordinary slaw recipe and so full of flavor. I love it with salmon or grilled chicken. Hope you do too.

Ingredients
  • 16 ounce package shredded broccoli slaw mix
  • 2 cups fresh pineapple chunks
  • 2 cups broccoli florets
  • 1/2 cup mayonnaise
  • 1 to 2 tablespoon adobo sauce from canned chipotle peppers in adobo sauce
  • 1/4 teaspoon salt

Directions
  1. Rinse and drain shredded broccoli then dry thoroughly.
  2. In a bowl combine shredded broccoli, pineapple and broccoli florets.
  3. In a small bowl stir together mayonnaise, adobo sauce and salt.
  4. Add mayonnaise mixture to broccoli mixture then toss to coat.
  5. Cover and chill 1 to 4 hours.
  6. Toss before serving.

The pineapple really makes this great. When I make slaw for parties I always use the juice from crushed, canned pineapple instead of sugar and then toss the crushed into it and everyone loves it and can't figure out why. I think another reason they like it so much is no vinegar. Great slaw, thanks.
