I love tacos and I made this for a brunch and the ladies loved it. Make it any time!

Ingredients
  • 1 T butter ( or cooking spray)
  • 2 eggs beaten
  • 1/4 cup leftover taco filling warmed
  • 2-4 T cheese depending on your love of it
  • 2 T salsa
  • 1 T sour cream

Directions
  1. Prepare Eggs in butter as an omelet.
  2. When done add meat mixture and cheese to one side.
  3. Add the salsa and sour cream as you like and fold it.
