These can be a main course or served as appetizers, I've done both. When they are appetizers I make them smaller.

Ingredients
  • 3 cans of tuna, packed in water
  • 1 egg
  • corn meal, to roll in
  • 1/2 med onion, minced
  • 1 celery stalk, minced
  • 1 cup seasoned bread crumbs ( i usually use crushed croutons, but I have used crackers and even corn meal in the mix)
  • oil, to fry in

Directions
  1. Drain tuna.
  2. Combine tuna, egg, onion, celery and bread crumbs in bowl.
  3. Make sure to mix well.
  4. Take some of the mixture and pat into a patty.
  5. Take patty and coat well with corn meal.
  6. Put in pre-warmed oil in skillet.
  7. Cook over med. heat until sides start to brown, turning once to brown the other side.
  8. These are great leftover sammies the next day :o).
  9. Enjoy.
