French Method Scrambled Eggs

- 2 tablespoons butter shopping list
- 4 large or extra large eggs shopping list
- 1 teaspoon white vinegar shopping list
- 2 tablespoons cream or 1/2 and 1/2 (optional) shopping list
- a few snips of chives (optional) shopping list
- salt and pepper to taste shopping list
How to make it
- Place 1 inch of water into bottom of double boiler
- while this is heating you may be cooking your bacon, preparing the toast etc.
- Mix eggs and cream and 1/2 the butter ( cut into small pieces first) and some salt
- When the water is boiling add remaining butter
- when melted add eggs and the teaspoon of vinegar
- stir with wooden spoon until eggs are cooked to your taste
- sprinkle on chives if you like
- Extra eggs will increase cooking time
