How to make it

  • Place 1 inch of water into bottom of double boiler
  • while this is heating you may be cooking your bacon, preparing the toast etc.
  • Mix eggs and cream and 1/2 the butter ( cut into small pieces first) and some salt
  • When the water is boiling add remaining butter
  • when melted add eggs and the teaspoon of vinegar
  • stir with wooden spoon until eggs are cooked to your taste
  • sprinkle on chives if you like
  • Extra eggs will increase cooking time
