Cooking the eggs in a double boiler either bought or just using two pots seems to produce creamier more consistant eggs. They also keep better in the pan if you need more time for a side dish. You will find yourself wishing you had made more.

Ingredients
  • 2 tablespoons butter
  • 4 large or extra large eggs
  • 1 teaspoon white vinegar
  • 2 tablespoons cream or 1/2 and 1/2 (optional)
  • a few snips of Chives (optional)
  • salt and pepper to taste

Directions
  1. Place 1 inch of water into bottom of double boiler
  2. while this is heating you may be cooking your bacon, preparing the toast etc.
  3. Mix eggs and cream and 1/2 the butter ( cut into small pieces first) and some salt
  4. When the water is boiling add remaining butter
  5. when melted add eggs and the teaspoon of vinegar
  6. stir with wooden spoon until eggs are cooked to your taste
  7. sprinkle on chives if you like
  8. Extra eggs will increase cooking time
