Gluten Free Fried Chicken

- 1 2-3 lb. frying chicken, cut into desired pieces shopping list
- 1/2c cornstarch shopping list
- 1/2c potato starch shopping list
- 1t salt shopping list
- 1t pepper shopping list
- 1/2t xanthan gum shopping list
- 1/2t baking soda shopping list
- 1/2t ground red pepper (more or less depending on taste) shopping list
- 2c vegetable oil shopping list
How to make it
- Rinse chicken, pat with paper towels and set aside.
- Place all dry ingredients into a large freezer bag. Shake to mix well.
- Heat oil in frying pan to 375.
- One at a time place chicken pieces in bag and coat well with flour mixture. Press mixture firmly onto chicken if needed.
- Place coated chicken in frying pan and fry on each side for about 15 minutes. Fry until no longer pink and internatl temperature is 185 degrees.
- ***To ensure chicken is done, I usually just brown my chicken in the oil, then transfer to a cookie sheet and bake at 375 for about 20 minutes.
