Chicken with chive sauce

- 6 chicken breast halves shopping list
- 4T vegetable oil, divided shopping list
- 1c sliced mushrooms shopping list
- 3/4c minced chives shopping list
- 2T flour (GF blend works great) shopping list
- 1/4c chicken broth shopping list
- pinch nutmeg shopping list
- salt and pepper to taste shopping list
- hot cooked rice shopping list
How to make it
- In large skillet brown chicken in 2T oikl for 3-4 minutes per side. Remove and keep warm.
- Sautee mushrooms and chives in remaining 2T oil for 2 minutes. Stir in flour. Gradually whisk in broth until blended. Stir in cream, nutmeg, salt and pepper. Cook and stir until thickened ..about 2-3 minutes.
- Return chicken to pan; turn to coat. Cover and simmer until chicken is competely done...no pink. Serve over hot cooked rice.
