Ingredients
  • 6 chicken breast halves
  • 4T vegetable oil, divided
  • 1c sliced mushrooms
  • 3/4c minced chives
  • 2T flour (GF blend works great)
  • 1/4c chicken broth
  • pinch nutmeg
  • salt and pepper to taste
  • hot cooked rice

Directions
  1. In large skillet brown chicken in 2T oikl for 3-4 minutes per side. Remove and keep warm.
  2. Sautee mushrooms and chives in remaining 2T oil for 2 minutes. Stir in flour. Gradually whisk in broth until blended. Stir in cream, nutmeg, salt and pepper. Cook and stir until thickened ..about 2-3 minutes.
  3. Return chicken to pan; turn to coat. Cover and simmer until chicken is competely done...no pink. Serve over hot cooked rice.

How much cream, and can I use half and half? Is there low fat cream? I wish!
