This is one of my favorite cuts, it is very tender and flavorful. Anything you can do with a steak you can do with a flat iton. This steak is best and most tender when rare to medium rare.

Ingredients
  • Sea salt to taste
  • 1 tsp, cracked grd. black pepper
  • 1/2 cup Italian dressing
  • 1/2 cup red wine
  • (or your favorite marinade or rub)

Directions
  1. Combine ingredients in a 1 gallon zipper bag.
  2. Place steak in the marinade and let stand refrigerated for at least 3 hours.
  3. To grill place the meat directly over medium coals. Grill 7 minutes per side. Slice across the grain and serve.

You are quite right about flat iron steaks. They are sooo tasty. I use a marinade of a combo of mesquite smoke and worcestershire sauce with garlic and pepper. My mouth is watering just thinking about it.
