- 2 Tbls. olive oil shopping list
- 1 lb. bonesless, skinless chicken breast, cut into chunks shopping list
- 1/4 thick sliced, smoked ham, cubed shopping list
- 1 lb. smoked sausage, preferably cajun style, sliced shopping list
- 1/2 lb. to 1 lb. of fresh shrimp, peeled and deveined shopping list
- 2 c. chopped onion shopping list
- 1 c. chopped celery shopping list
- 1 c. chopped red bell pepper shopping list
- 2 cloves minced garlic shopping list
- 2 cups of long grain rice shopping list
- 1 tsp. each salt, fresh ground black pepper, paprika shopping list
- 1/4 tsp. hot red pepper flakes or more if you like it spicy shopping list
- 1 1/2 tsp. dried thyme or 3/4 tsp. fresh thyme shopping list
- 2 crushed bay leaves shopping list
- 1/4 tsp. allspice shopping list
- 4 - 5 c. hot chicken broth shopping list
- 1 14 oz. can diced tomatoes, drained shopping list
- rind of 1 lemon shopping list
How to make it
- Heat olive oil in LARGE heavy skillet.
- Fry chicken and ham in olive oil until well browned,remove from pan and set aside.
- Fry sausage in same pan until browned, remove and set aside.
- Saute onion, celery, red pepper and garlic in same pan until wilted about 5 minutes.
- Stir in the rice and all of the seasonings and saute 3 to 4 minutes to coat rice grains with oil.
- Add hot chicken broth to pan followed by the meats and stir to mix.
- Cover and simmer over low heat just until the rice is barely tender, about 15 minutes.
- Add the tomatoes, shrimp and lemon rind and remove from heat.
- Let stand, covered, until shrimp is cooked and turns pink about 10 minutes.
- Enjoy!
