How to make it

  • Heat olive oil in LARGE heavy skillet.
  • Fry chicken and ham in olive oil until well browned,remove from pan and set aside.
  • Fry sausage in same pan until browned, remove and set aside.
  • Saute onion, celery, red pepper and garlic in same pan until wilted about 5 minutes.
  • Stir in the rice and all of the seasonings and saute 3 to 4 minutes to coat rice grains with oil.
  • Add hot chicken broth to pan followed by the meats and stir to mix.
  • Cover and simmer over low heat just until the rice is barely tender, about 15 minutes.
  • Add the tomatoes, shrimp and lemon rind and remove from heat.
  • Let stand, covered, until shrimp is cooked and turns pink about 10 minutes.
  • Enjoy!
