This is a time consuming recipe but well worth the effort. My mom used to make this for the holidays, its good over cakes, puddings and ice cream, but use sparingly as it is rather rich

Ingredients
  • ---------makes about 2 quarts------
  • 1 cup fruit cocktail, not drained
  • 6 cups sugar
  • 6 oz. brandy, bourbon or whiskey
  • 1 cup fruit cocktail, drained
  • 1 1/2 cups canned pineapple chunks, drained
  • 1 cup maraschino cherries, drained
  • 1/2 cup canned white grapes (do not use fresh grapes) or dates

Directions
  1. ------these instruction are repeated over a period of 12 weeks-------
  2. Into a gallon jar or stoneware crock, place 1 cup undrained fruit cocktail, 1 cup of the sugar and 1oz. of brandy. Cover jar loosely. Let stand in cool place for 2 weeks, stirring 3 times in that period.
  3. Add 1 cup drained fruit cocktail,1 cup of the sugar and 1oz. brandy. Cover loosely, let stand and stir as directed above.(step 1 ).
  4. Add maraschino cherries,1 cup of the sugar and 1oz. brandy. Cover loosely, let stand and stir as directed above. (step 1 ).
  5. Add apricots,1 cup of the sugar and 1oz brandy. Cover loosely, let stand and stir as directed above. ( step 1).
  6. Add 1/2 cup each pineapple chunks and grapes, 1 cup sugar and 1oz. brandy. Cover loosely, let stand and stir as directed above. (step 1).
  7. At end of last 2 weeks, cover tightly and refrigerate. Fruit will keep indefinitely. Spoon from bottom of jar to serve over cakes, puddings and ice creams.

My mom used to make this too, when I was growing up, she would also use canned peaches too. She would use some of it when she made fruit cake and on top of the ice cream, but I was too young to have any. This brings back fond memories. Thanks for the great post.
