Ingredients
  • 1 large potato, cut in 1-inch slices
  • 1 yam, cut in 1-inch slices
  • 2 carrots, cut in 1-inch rounds
  • 1 onion, cut in 1/2-inch wedges
  • 1 green and 1 red bell pepper, cut in 1-inch slices
  • 2 T olive oil
  • 1 t thyme
  • 1 t oregano

Directions
  1. Preheat oven to 400 degree.
  2. Wash and cut all vegetables; place in a large bowl.
  3. Sprinkle with spices and oil; mix well.
  4. Spread vegetables evenly in a large baking pan.
  5. Roast 1-hour.
  6. Stir occasionally.
