Carolina Up Country Cabbage Salad

This is a 1961 recipe from a Carolina Up Country Cook Book. Green cabbage with celery, white raisins soaked in sherry, pecans , apple, a little onion mixed with mayonnaise.
Ingredients
- 3 cups shredded or chopped green cabbage shopping list
- 1 cup celery, chopped shopping list
- 1 cup white raisins shopping list
- 1/4 cup sherry shopping list
- 1/2 cup pecans, chopped shopping list
- 1 cup crisp apple, diced shopping list
- 1 teaspoon onion, finely cut shopping list
- 1/3 cup mayonnaise shopping list
How to make it
- Soak raisins in sherry
- Combine all ingredients, adding apple last
- Lightly coat with mayonnaise and chill

Raisins soaked in sherry go into my empanada pie and I love them. Now I can't wait to try them in this recipe. Sherry does something magical to that dried up grape. YUM.
