Carolina Up Country Cabbage Salad Recipe
This is a 1961 recipe from a Carolina Up Country Cook Book. Green cabbage with celery, white raisins soaked in sherry, pecans , apple, a little onion mixed with mayonnaise.

Ingredients
  • 3 cups shredded or chopped green cabbage
  • 1 cup celery, chopped
  • 1 cup white raisins
  • 1/4 cup sherry
  • 1/2 cup pecans, chopped
  • 1 cup crisp apple, diced
  • 1 teaspoon onion, finely cut
  • 1/3 cup mayonnaise

Directions
  1. Soak raisins in sherry
  2. Combine all ingredients, adding apple last
  3. Lightly coat with mayonnaise and chill

Wow, does this one ever sound good!! Sounds almost like a take on a Waldorf salad, but the sherry-soaked raisins ??? FABULOUS! Thanks for sharing this one, RoseMaryBlue :)

Raisins soaked in sherry go into my empanada pie and I love them. Now I can't wait to try them in this recipe. Sherry does something magical to that dried up grape. YUM.
