This is a delicious okra and tomato gumbo. The addition of curry powder and brown sugar adds a special taste. Old recipe.

Ingredients
  • 1/2 cup finely chopped onion
  • 1 pound sliced okra
  • 2-1/2 cups fresh or canned tomatoes
  • 1/2 teaspoon curry powder
  • 1 teaspoon salt
  • 1 tablespoon brown sugar
  • 1 tablespoon butter

Directions
  1. In a large heavy iron skillet, partially cook onion and okra in butter
  2. Add tomatoes and seasonings
  3. Cover and simmer about 30 minutes
